Montrose has a new restaurant that opened a couple of months ago, and it really is the talk around town. I have heard so many mixed reviews on this place, so I wanted to try it out for myself because it is so darn cute. Vibrant opened in September of 2018 and serves a variety of different healthy food options. They have menu options that are “gluten free, dairy free, refined sugar-free, corn free, peanut free, and non-GMO”. They also try to source locally and organically when they can, which I think is a great perk of their restaurant. They serve breakfast from 7-4, lunch at 11, and dinner at 5. Vibrant even offers a kid’s menu which is typically hard to find at most nicer, healthy restaurants. When we went, there was a very diverse crowd dining there, including a couple of young parents with their kids. The line became much longer around 11 am, spanning all the way out the door, so I recommend going before or around 10 am. They also have a good-sized parking lot which is helpful because sometimes in Montrose this can be a big issue. The décor in this place is everything. It is a millennial’s dream, and is so Insta-worthy.
If you are trying to eat healthily, or just enjoy healthy food, then I highly recommend this place for you. If you aren’t big on healthy food, then you probably won’t enjoy your meal here very much. It wasn’t my favorite meal, but if I wanted something healthy I would go back and try something else. The main reason I would recommend this place is for the beautiful, chic, simplistic décor. It is so beautiful in there that you should at least go once, even if you only get a drink. I enjoyed their matcha latte (but I’ve had better) and I did have to send it back for them to make it stronger. They offer every type of milk that you might want to try- coconut, sesame, cashew; but they don’t have regular milk. The outdoor seating was lovely, but when we went it was rainy and wet out there. I would like to go back on a nice day to enjoy the patio seating. I ordered the savory toast thinking it would be the least healthy thing on the menu, and comparable to regular avocado toast, but it was very healthy bread which wasn’t my favorite. The prices are a little expensive, but I think it is reasonable for most healthy food places. I would love to go back to try their granola bowl and maybe even the pancakes. I like to give restaurants a couple tries before I truly make a decision if I like it or not because you could have just ordered the wrong thing the first time. It’s definitely not your typical restaurant so make sure you check out the menu and know what you’re getting yourself into before you make the trip. I can’t wait to go back, and I am excited to see what I decide to try next!
